September Recipe:

My Original Yogurt Bowl

  • 1 thing of personal size almond based yogurt (you can also use any type of yogurt)

  • 1 scoop of dried cranberries

  • 1 big spoonful of pb ( I use skippy all-natural)

  • 1 cup of instant oats

  • 1 squirt of honey

  • 1 tsp of flax seeds

  • 8-10 chocolate chips

  • Directions: heat the cranberries, pb, oats, honey and flax seeds in microwave for 20-30 seconds.

  • Add in the yogurt. Sprinkle chocolate chips on top of the yogurt bowl creation.

Vegan Pumpkin Chocolate Chip Cookies

  • I found this recipe on iheartvegetables.com. I found allergen chocolate chips at Wal-Mart! Instead of using 2 cups of chocolate chips, next time I might do 1 cup chocolate chips and 1 cup pecans.

  • I thought these were delicious and it made me feel better knowing they were healthier :)

November Recipe:

DAIRY -FREE YOGURT BOWL W/CHOCO CHIPS & PB

You Will Need:

  • 1 carton (5.3 oz) of Yogurt Alternative

    •  I use Silk Vanilla Almond Milk

    • There are also flavors like dark chocolate, strawberry, etc.

    • There’s also coconut milk based yogurt alternatives that are tasty!

    • I’ve only found luck at Wal-Mart, Hy-Vee and Target for these yogurts. Fareway OCCASIONALLY has strawberry yogurt alternative.

  • ½ cup of Granola

    • I use Simply Granola Oats, Honey & Almonds from Quaker Oats

  • 1 spoonful of Peanut Butter

    • You decide on how full your spoonful is ;)

    • I use Jiff Natural PB

  • 1 tbsp of Allergen Free Chocolate Chips

    • I’ve had the best luck with Wal-Mart keeping these in stock

  • 1 sliced banana 

Directions:

  • Scoop and dump out the yogurt into a bowl

  • Sprinkle the granola on top, I try to keep most of it in the middle of the bowl

  • Add the pb in the middle on top of the granola

  • Add the chocolate chips on top of the granola

  • Lay the sliced banana around the outside of your yogurt

  • ENJOY THE DELICIOUSNESS


December Recipe:

Spinach Chips & Turkey Nachos

WOW. This was delicious y'all and it only took me 10 minutes to cook and prepare! I hid the fact that I used turkey burger instead of ground beef and I got wonderful reviews

What you need:

  • 1 lb ground turkey

  • 1 pack of spinach carb balance tortillas

  • 1 packet of lower sodium taco seasoning

  • Red onion

  • Pepper (I used a yellow one)

  • Pico de gallo

  • Cheese ( I use non-dairy)

  • 1 can of black beans

  • Air Fryer

Directions:

  • Brown the ground turkey in a pan.

  • Add taco seasoning as directed. I added the onions and pepper within my turkey mix.

  • Take out tortillas (I used 4 for 3 people and still had left overs). Cut the tortillas into triangles. Add into the air fryer at 400 degrees for 5 minutes or less.

  • Arrange the chips on your plate. Add meat & veggie mix. Top with beans, cheese, pico de gallo.

  • Enjoy!!

January Recipe:

Goji-Berry Smoothie Bowl

I found all of these ingredients at Wal-Mart :)

Ingredients:

  • 1 Cup Goji Berry Powder

  • 1 Banana or Yogurt

  • 2 Cups Frozen Berries (I use triple berry mix)

  • Hemp Seeds (optional) (sprinkle)

  • 1 cup Milk (coconut, almond, cows)

  • Granola (I use Quaker almond and honey granola) (personal preference on amount)

  • Coconut Shavings (preferred preference on amount)

  • Chia Seeds (preferred preference on amount)

  • Fruit Toppings (optional)

Directions:

  • Blend Goji Berry Powder, Banana, Frozen Berries, Hemp Seeds and Milk

  • Place Blended Ingredients Into A Bowl That You’ll Be Eating Out Of

  • Top W/ Granola, Coconut Shavings, Chia Seeds and Additional Fruit (optional)

  • Enjoy :)

  • Don’t Forget To Place Hemp Seeds In The Refrigerator After Use

February Recipe:

Homemade & Healthy Thai

- this is such a YUMMY & easy dish to make. It probably took me 10 minutes altogether to whip this up

I have no ingredient amounts because I eye balled everything ;)

Ingredients:

  • Thai Spaghetti Gluten Free Noodles

  • Cucumber

  • Corn

  • Onion

  • Sliced Carrots

  • Eggs

  • Teriyaki Sauce

Directions:

  • Cook the thai noodles as directed

  • Add noodles to boiling salt water. Cook for 4 minutes. Drain the noodles. Run cold water over the noodles. Drain again

  • In another pan cook the sliced cucumber, corn, diced onion, sliced carrots until brown.

  • Add diced egg in and cook for another 2 minutes.

  • Add noodles to bowl, top with your vegetables and pour desired amount of teriyaki sauce on top.

  • Enjoy!
